25 small cubes of candied ginger


Preheat the oven to 165 ° C
Mix the sugar and butter with a fork until the mixture is creamy.
Separate the white from the egg yolks. Add the yolks and vanilla to the sugar / butter mixture.
Mix the yeast and the 2 flours in another bowl. Add the flour to the yellow / sugar / butter mixture.
Beat the egg whites until stiff
Add 1/3 of the whites and mix well with a fork
Then add the rest of the whites and mix very gently, preferably with a spatula, to aerate the dough
Grease the pan well. Fill the cubes 3/4 full
Add a cube of ginger
Bake 25 minutes at 165 ° C
